The roots of the quesadilla are in the north of the country and come from revolutionary times. These first quesadillas were an improvised dish made with flour tortillas from the day before, reheated on the comal with cheese from the region.
This dish has changed a lot since its origin and today we find many types. In the north of the country, they are eaten with a wheat flour tortilla and cheese is combined with meat. While in the center of the country, corn dough is more common. Especially in Mexico City, where they are sold with the option of having cheese or not, and that inside they have stews with pumpkin flowers or nopales.
