Picadillo (Ground Beef) is a well known dish throughout Mexico and is uniquely versatile as it really lends itself to any occasion. In its simplest form, it takes everyday ingredients and appears on the family table on any given day.
This picadillo is cooked with chipotle, which is a type of chile usually of the variety of jalapeño, that has been left to mature in order to become red and dry. The chronicler Bernardino de Sahagún found that chipotle peppers could be often seen in the market of Tlatelolco, in Mexico City, in the sixteenth century.
How to Eat
a) Served in tacos: Grab a taco in your hand, pour over any salsa and enjoy it with the sides of the dish.
b) Served in a stew: Take a warm tortilla with one hand and with the other take a spoon, take the stew and put it in the center of the tortilla and fold it like a taco. Pour over any salsa and enjoy it with the sides of the dish.
